What are the small, silvery scratches on my Calphalon Commercial cookware?
The silvery marks that resemble scratches are not factory defects or damages. These are “character lines”. These usually occur when the hard surface rubs against or hits a much softer surface. These discolourations should not bother you but if they do, you can try to rub it out using a smooth dishwashing cloth. Do not try to remove it using a scouring pad and powdered detergent. The combination of these two may really scratch the surface of your cooking vessel.

Can I clean my Calphalon Commercial cookware in a dishwasher safe?
No. Calphalon Commercial cookware should not be cleaned inside a dishwasher because the harsh ingredients found in common dishwashing detergents may cause irreparable damage to the infused anodized and hard anodized cooking surfaces. Not only will this reduce the life of your cookware, it could adversely affect the outcome of your dishes as well.

How should Calphalon Commercial products be cleaned?
Calphalon Commercial can be cleaned using a lot of hot or lukewarm soapy water and a soft dishwashing cloth. Simply wipe the surfaces clean and rinse. For hard-to-remove dirt, soak the cookware in hot water for at least 10 minutes. You will see the dirt gradually lift off. Once the dirt is gone, you can wipe the surface again and rinse.

Does Calphalon Commercial really come with a Lifetime Warranty?
Yes. All Calphalon products come with a lifetime warranty against factory defects or manufacturer’s damages. Should you receive a defective model, you can easily have this replaced at no extra charge. Take note, however, that the warranty only covers factory defects. Damages done to improper use, cleaning and handling is not included in the policy. Damage brought about by dishwasher detergents renders this warranty void.

Is it necessary to oil or grease the cooking surface before I cook with Calphalon Commercial?
Normally, greasing or oiling is not necessary but it will depend on the dish you are preparing and on which Calphalon product you plan to use. Standard Calphalon Commercial pans no longer need to be oiled or greased. For Calphalon Commercial Non-Stick Bakeware, even if the surfaces are non-stick, if the recipe calls for greasing, it’s best that you do grease the surface first.

Is pre-heating before cooking really necessary with Calphalon Commercial?
Whether or not you are using Calphalon Commercial, it is advised that you pre-heat the cooking surface before you put food items on it. Pre-heating is done to ensure that you get the most out of your cooked foods. Food that is cooked on surfaces that were not pre-heated tend to be tough and dry.

What is Hard Anodisation and what does it do?
Hard anodisation is a chemical process by which the surface of a material (in this instance, aluminum) is treated to make it harder than stainless steel. This technology was first developed by NASA and later on, was applied to cookware.

What is Infused Anodisation and what does it do?
Infused anodisation is similar to hard anodisation. The difference is that a fast-release polymer is first injected onto the surface before the material is subjected to anodisation. By including the polymer, the surface would now be able to transmit heat evenly and quickly, thus ensuring that your food is cooked properly.
